Greg's Bday Weekend

Typically, the past 5 or so of Greg's birthdays have been spent doing a local mountain bike ride in Eagle with friends and then a BBQ at our house. Time to switch up traditions! 

When I asked Greg what he'd like to do for his birthday, he just shrugged, "Whatever." Yes, so helpful.

There have been some organized hikes happening and one of them fell on Friday, August 25th. It was a sunset hike up one of the Orems (volcanic cones) nearby. I decided to bring a sweet treat up to share for Greg's birthday. It had to fit in my little day pack and be enough for about 8 people. I found this coffee cake roll that was boxed and a little "happy birthday" sign to put on top.

The hike went through forest, along a meadow with horses and then up the hill. We reached the top as the light turned golden and the view opened up beautifully. Lots of photos were taken and then I remembered the treat I had in my bag. I had someone help me get the cake situated and then we surprised Greg with song and cheer. A great success.









We just received our shipment on the 24th, which included our road bikes. Just in time for a birthday bike ride. The west side  of the island we live on is pretty rural so riding our bikes was wonderful with very little traffic. It was a fun way to go explore a bit and see some new parts of the area. Plus, riding along the coast is spectacular.


And to round off the weekend, on Sunday we went SCUBA diving. One of Greg's fellow math teachers and his wife went with us. This was our second time going and the water was warm, visibility a tad better. Our second dive was at a new place where we swam through a tunnel of lava rock and wound our way around a lot of rock formations. There was a beautiful school of sardines and some curious fish. Always wonderful to just be down there. 

There was a fifth person who joined us that was a Korean American college student on his was to Taiwan for a semester abroad. He was pretty new to diving and struggled a bit. Mr. Bong, our divemaster, did a great job with him.  

We ended up getting some Gimbap and sitting outside a CU convenient store to eat, relax, and enjoy the afternoon after our dive. Convenient stores are a big thing here. Most of picnic tables outside of them and people will eat and drink, just hanging out there.

We landed on Jeju Island - Our New home!

 As I write this, we have officially been on Jeju Island for 24 hours! We left the US on July 17th at 8:20am after my mom and her partner dropped us off at 5:40am - thank you!! We were some of 'those' people travelling with lots of luggage. Our first 'stressor' was trying to just use the outside bag check so we wouldn't have to go to far with all of our stuff.  (Why don't US airports have more luggage carts. They are always available everywhere else we travel around the world.) The staff person let us know we should have some form filled out which we had not heard of. Frantically we tried finding this form and filling it our online, The website was located in South Korea and kept crashing. Jeju Island's little erotic sculpture park

Back in December 2022, when I let my dear brother know that we were moving to Jeju Island, South Korea, he replied back fairly quickly with a link to a rather erotic website of a sculpture park on the island. Today, Greg and I made it to Love Land! A little history from Wikipedia: "During the 1970s, Jeju Island became a popular honeymoon destination for Korean couples, due to the island's warm climate and Cold War-era restrictions on overseas travel. Many of the couples had wed because of arranged marriages, and the island also became known for being a center of sex education. Learning To Make Korean Food

 In our little kitchen, I've been starting to try my hand at Korean vegetarian recipes. There are these 5-Day markets here on the island, which happen roughly every 5 days. The one closest to us in Molsepo, which is the closest town south of us on the water and is open on days that end in 1 and 6.  It takes us about 15-20 minutes by bus to get to Molsepo. These markets are covered, open air and have vegetables, fruits, fish, meat, grains, clothes and other textiles. When buying there, it's quite a bit in quantity, so I've had to figure out how to use all of it with just two of us. Here are some of my culinary creations so far: I've made this a few times now. The left dish is a eggplant and mild chili pepper stir fry and the right dish is a Korean BBQ Potato dish. The market had a grain variety of different rice varieties, barley, and millet, which is the back dish. Greg and I have really liked all three. Vegan Kimchi! This is a cabbage, daikon version. Yummy!
